Divide the dough directly on the parchment and shape it there.

Came together very nicely. You could add a little more lemon zest to make it more vibrant and I had to bake for 15 mins the second time round (but maybe that's just my oven), but overall really good biscotti, not too sweet.

Delicious! I found it helpful to cut straight down with the serrated knife rather than sawing, in order to chop through the pistachios rather than dislodging them and breaking apart the biscotti.

LOVES TO COOK

Halfway through slicing with a serrated knife and a pile of crumbs, I switched to a very sharp large kitchen knife, and the slicing was perfectly easy. Thanks to the other cooks that left a note! Delicious biscotti crumbs and all! So much better than any you can buy! I did reduce the sugar to 1/4 c. and added 1/4 c. of dried cranberries...because I like it like that...yum!

These are absolutely delicious and gone within 24 hours at my house. I subbed walnuts for pistachios because I had them in house. So easy and good. I'm wondering, could you add mini chocolate chips into this recipe? The idea of a walnut/chocolate chip biscotti sounds so great.

Do not use serrated knife. Sharpe straight knife works; serrated knife makes the biscotti crumble.

Mix cocoa with the flour and a bit of powdered instant coffee to taste. Omit the almond and vanilla extract. Add sliced almonds. When cooled make a glace of powdered sugar and kahlua or other coffee liquor.

Try adding 1/4 tsp of ground cardamom.

Fantastic! Added dried turkish apricots in same quantity as pistachios. These were surprisingly light and delicious. The dough was rather sticky but a little flour on the board did the job.

Add white chocolate and cranberry.

Reduce sugar to a 1/2 cup and add white chocolate , cranberries along with pistachios,you will have an elegant little jewel of a cookie.

Added coarsely chopped almonds, which made it difficult at first to slice the logs after baking without falling apart. I turn the oven off and waited for the logs to cool more. Then I discovered that pressing down on the serrated knife edge worked better than a sawing motion. 10 minutes back in the 350° oven made them overly browned. Will enjoy them anyway, but a bit too much work compared to other cookies.

I actually used only 1/2 cup sugar and found it perfectly sweet enough. I also toasted the pistachios first and added dried apricots in slivers. Loved the apricots for that tang and sweetness. Big hit in our house! Perfect for dipping in espresso.

Substituted Disaranno Amaretto for the almond extract with excellent results. Also baked about 15 min longer than suggested to get a nice degree of toasting. Lovely biscotti!

I took the advice of another poster and added the zest of an orange instead of lemon (I think it was a minneola, actually). And I subbed a cup of finely ground almonds for one of the cups of flour. Oh yeah, no pistachios in the house so I used whatever slivered and chopped almonds I could scrounge up. All in all an excellent variation!

A half teaspoon of anise (not extract) is wonderful. Chopped dried fruit is also yummy.

For those who added dried fruit (I’m thinking cranberries or cherries), how much did you add to the dough?

I add chopped, candied orange rind. It provides a nice textural contrast.I also sometimes drizzle the top with ribbons of dark chocolate.

I substituted 1/2 C almond flour plus 1-1/2 C regular flour. Delicious! I concur, addition of dried cranberries makes these very tasty!
