Is there anything more comforting than a warm bowl of creamy vegan rice pudding?! I think not!
Whenever the winter months roll in, I’m always on the lookout for warm pudding recipes that’ll not only satisfy those sweet-tooth cravings but will also warm me up from the inside out and this easy vegan rice pudding recipe certainly doesn’t disappoint!
Serve it for breakfast with freshly sliced berries or as a decadent dessert with some coconut whipped cream and perhaps a sprinkling of chocolate chips!
Is This Creamy Vegan Rice Pudding Gluten-Free?
It is! All rice in its natural form is gluten-free, making this healthy vegan rice pudding 100% gluten-free.
That said, always check the label on the rice purchased since some rice is stored in factories that also stores gluten-based products. This is certainly something to consider for someone with high gluten sensitivities.
What You’ll Need
The ingredients list for this egg-free rice pudding is simple. You’ll likely have everything on hand already!

White rice

Can I Use a Different Milk to Make Non-Dairy Rice Pudding?
Absolutely! While I’ve used almond milk, you can certainly use oat milk or even coconut milk instead. Whatever you prefer!
Can I Use Another Type of Rice?
Yes, of course. I love the fluffy texture provided by the white rice – it’s super comforting and seems to absorb all of the rich and creamy ingredients used in this recipe.
Of course, if you don’t have white rice on hand or prefer not to eat white rice, you can use other rice such as brown rice or risotto rice. Just keep in mind that these other rice varieties take longer to cook than white rice. You may also need to increase your milk and/or water.
How to Make Plant-Based Rice Pudding
Place all of the ingredients into a pot and whisk well.
Bring the pot to a boil, and then lower the heat to cook at a low simmer.
Stir the mixture often to avoid sticking, and cook until it reaches your desired thickness (around 15-20 minutes).
Serve warm with a little cinnamon sprinkled on top.
When to Enjoy Your Almond Milk Rice Pudding
While traditionally a dessert, I know that some even enjoy it as a sweet breakfast treat, topped with fresh fruit, so feel free to enjoy this creamy and satisfying rice pudding whenever the urge arises!
How to Store Vegetarian Rice Pudding
Once this healthy vegan rice pudding has completely cooled, store it in an airtight container in the refrigerator for up to 3 days.
You could also freeze rice pudding for up to 1 month. Thaw overnight in the refrigerator before you attempt to reheat it later on.
You will find that the rice pudding has thickened in storage – this is completely normal. To reheat leftover vegetarian rice pudding, add it to the stovetop on low-medium heat and add in some additional milk while breaking the rice pudding down again. As you reheat, taste to test in case it needs any additional spice or sweetness added.
While I’ve used cinnamon, you could also use nutmeg in your rice pudding.
You need to pay close attention when making this pudding. If the rice sticks to the bottom of the pot and starts to burn it will ruin the taste of the entire pudding and you’ll need to start afresh.
This almond rice milk pudding is super delicious served as is in a bowl but you could also add some freshly sliced berries to it as well as some whipped coconut cream for added decadence.
If you’d like to make a chocolate rice pudding, simply mix in some cocoa powder and serve with a sprinkle of mini chocolate chips – yummy!
How to Make Vegan Rice Pudding. Our version begins with combining dairy-free milk (we like almond for its neutral flavor) with maple syrup for natural sweetness, cornstarch to thicken, and sea salt to enhance all the flavors. The cornstarch is the egg replacement in this recipe.
If your rice pudding has ended up too thin, it is likely that it didn't cook it long enough at the end to thicken the custard. If it needs rescuing, pour it into a saucepan, heat, then stir in a bit of cornstarch mixed with cold water, a bit at a time, until the pudding thickens as needed.
While we've mentioned before that this dessert gets its perfectly creamy texture from the starch that is released when the grains are cooking, we do suggest a rinse for this recipe in order to wash off excess debris and added starch.
So if you want to make boxed pudding with almond milk, opt for Cook & Serve pudding and a perishable almond milk, which has fewer additives, and will yield a thicker texture.

Traditional 'pudding rice' is just a cheap short grain rice, but you could use arborio, the traditional short grain risotto rice or sushi rice and get a similar result.
Rice - I've tried all sorts of rice types and uncooked medium grain is by far the best for rice pudding, followed by risotto rice. Risotto rice (arborio) - needs extra liquid, add 1 cup (250ml) water into the saucepan with milk, and cook for 1 hr 20 minutes.
Don't cover when it's still hot. Do not cover when the pudding is still hot, but should be covered when the pudding has cooled. This is to avoid the presence of steam which makes the pudding runny.
Why is my oven-baked Rice Pudding dry? The baked rice pudding is probably dry because the cooked rice pudding was already too dry. The cooked rice pudding must be creamy, moist, and slightly runny before cooling. While it cools to room temperature, it will soak even more liquid.
You've got to love that it's made from simple ingredients like rice, milk, sugar and eggs. While this is a dessert, it does offer some nutritional benefits, including almost 10 grams of protein and 15 percent of the daily recommendation for bone-building calcium per cup.
As a result, the rice in the pudding can become firm and hard when it cools down. It's a natural process that occurs with certain types of rice. To prevent this, you can try adding a bit more liquid or cream to the rice pudding before refrigerating it.
You can serve your rice pudding immediately, or let it cool to room temperature and store it in the fridge for a cold, fruit-topped breakfast or snack. The pudding will keep in your fridge for about 4 days.

Will Pudding Set with Almond Milk? Yes, pudding – both instant and cooked – will set with almond milk as long as you use the right amount of almond milk. If you use the same amount of almond milk as you do regular milk, it will be too thin and will not set.
In many cases, using almond milk instead of cow's milk won't affect taste or texture. However, almond milk is thinner than dairy milk and has less fat, so recipes that need butterfat might have a different texture if you make them with almond milk.
Rice pudding is a creamy mixture of rice and milk that is cooked until it's thick and soft. It can be sweet or savory. This raisin-studded dessert rice pudding is thickened with an egg, sweetened with sugar, and enhanced with vanilla.

Plain white rice is, generally speaking, vegan. It contains only the rice grain without the hull, making it a good alternative for people who have trouble processing high-fiber foods. White rice often comes topped with non-vegan butter, so be sure to order yours plain.
Is Pudding Vegan? Pudding and custard is traditionally made with dairy and a thickening agent (usually gelatin which is derived from animal bones) So most pudding recipes and pudding box mixes are not vegan-friendly.
