C is for Cookie…or Coconut. These Cookies are the first of many recipes using coconut flour. Coconut flour is a high protein, high fiber, low carb cooking flour great for baking and breading. I actually found the recipe for these cookies by googling “coconut flour chocolate chip cookies”. When I cook, I usually get a general idea of how to make the meal and then add my own twist. Baking is probably the only time I really follow strict measurements.

My first attempt at making these cookies was to take as a Paleo-friendly dish to a CrossFit birthday cookout. Not only were they a hit with all the CrossFitters post-WOD, but they passed the kid test! They were so delicious, I made sure to throw together another batch for a primal cookout that Bill and I had this past weekend (more posts to come from that party, it was a blast!).

For these cookies, I used Bob’s Red Mill Coconut Flour, but the recipe is from Tropical Traditions (a great brand of coconut products). I followed the recipe from the website, but used raw honey instead of sugar. Other options for sugar would be agave nectar, or coconut palm sugar. I have yet to bake with coconut palm sugar, but once I do there will be a post about it!

Ingredients:

Process:

  1. Preheat oven to 375 degrees
  2. In a medium sized bowl, combine eggs, coconut oil, honey*, vanilla extract and salt. Once this is mixed, blend in the coconut flour.
  3. Stir in shredded coconut and chocolate chips
  4. On parchment lined baking sheets, drop heaping tablespoons of cookie batter **
  5. Bake for 15 minutes, or until golden brown.

*In a smaller bowl, I used the microwave to melt down the honey and coconut oil together. Heat until liquid form.
** Make sure to form the cookie shape when placing on the baking sheet, as these do not rise and spread like conventional cookies.

These cookies pack a powerful protein punch. They are a great way to satisfy the sweet tooth of any cookie monster, without the overpowering taste of sugar. Not to mention they are completely gluten, dairy and nut free. They are a great guilt-free treat for you, or your kids. Enjoy!

      I am new to the paleo-diet and was worried about what I will do when I need to get a sweet treat or bake for friends. This is such a great solution! I can't wait to try them! This is the best blog I have come across in a long time.

      it is an unrefined salt without any added chemicals or preservatives. celtic sea salt is best for everyday use, and all cooking.

      My eggs were straight from the fridge, so when I added the coconut oil it hardened… 🙁 Still waiting for the mixture to get to room temperature so I can finish my cookies 🙂

      Hi Shawna,

      Coconut oil can be a problem. It helps to add it in at the very end and then blend. That seems to keep it liquid long enough to be able to get the batter all mixed well. Hope it worked out for you!

      I just have to say thank you sooo much for these. I've been messing around with different coconut flour cookie recipes for quite some time and these have the perfect texture.

      Of course, with that being said I've probably made wayyy too many batches and mixed and matched a few ingredients such as switching nuts for the coconut, etc. and they're always amazingly yummy. Thanks again!

      Had to bake cake for my daughter's school and decided that I would bake myself a paleo treat. These were sooooo good. My kids couldn't stop eating them! Love your website.
